CROCK POT PUMPKIN OATMEAL Recipe

Ingredients
2 cups uncooked steel-cut oats
1/2 cup packed brown sugar
1 1/2 tablespoons cinnamon
3/4 teaspoon nutmeg
1 cup canned solid-pack pumpkin
6 cups water
1 cup fat-free half & half
1 cup raisins
1 teaspoon vanilla
TOPPING
2 tablespoons + 2 teaspoon brown sugar
1/4 cup + 1 T. + 1 teaspoon chopped walnuts
Directions
Spray Crock Pot with cooking spray. In a large bowl, stir together the oats, 1/2 c. brown sugar, cinnamon and nutmeg. Stir in pumpkin. Gradually stir in water and half & half. Stir in raisins and vanilla. Ladle into Crock Pot and cook on low 7-1/2 to 8-1/2 hours. Wake up to the smell of pumpkin and cinnamon! Top with remaining brown sugar and walnuts to serve.
