Edamame Pesto Sauce Recipe

  • 3 cups fresh basil leaves (not a packed cup)
  • 1 cup cooked edamame (I buy frozen and then boil them to the package directions)
  • 1/4 cup pine nuts or almonds
  • Olive oil - will use between 1/4 cup if not more
  • Salt & pepper to taste
  • 1 clove garlic (optional)
  • Parmesan cheese (optional)
In a food processor, add basil, edamame, nuts, and optional ingredients; garlic and parmesan cheese. As the pesto is being processed, add olive oil slowly. Can make as thin or thick as you'd like - can always add more olive oil later. Add salt and pepper to taste.

Can be used for pasta, pizza, as a dip, etc.
