Short rib Stew Recipe

  • 2 pounds short-ribs cubed or beef stew meat
  • 1/4 cup flour
  • 1 tablespoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons oil
  • 4 cups tomato juice
  • 2 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • 5 carrots sliced
  • 2 onions sliced (medium)
  • 2 potatoes diced (medium)
  • salt and pepper as desired
Mix flour, salt, and pepper together. Roll meat in it and brown in oil. Mix together tomato juice, garlic, and sauce. Pour over meat. Cover and simmer for 1 1/2 hours. Then add carrots, onions, and potatoes. Simmer 45 min. or until meat and vegetables are tender. Skim off fat. Season to taste.
