BONELESS LEG OF LAMB WITH MINT APPLE JELLY Recipe

Ingredients
1 jar mint flavored apple jelly
1 tablespoon salt
1 teaspoon black pepper
3 cloves garlic, minced
2 tablespoons Pure Olive oil
1 tablespoon Fresh Rosemary, chopped
4 pounds boneless leg of lamb
2 tablespoons warm water
Directions
Preheat oven to 500°F. Combine salt, pepper, garlic, oil and rosemary and mix well. Using the point of a small knife, cuts slits in the lamb. Rub lamb with the spice mixture. Roast lamb skin side up for 15 minutes. Reduce hear to 350°F and continue cooking for 40 minutes or until internal temperature reaches 160°F. Meanwhile, combine jelly and warm water and whisk until smooth. Allow lamb to rest for 15 minutes after removing from the oven. Slice lamb thinly and drizzle with mint sauce. Serve immediately.
