Menudo (Philippine Style Dish) Recipe

  • 2 pounds pork roast, cut inch 1/2 square
  • 1 can tomato sauce, small
  • 1/4 cup soy sauce
  • 1/4 teaspoon ground pepper
  • 2 bay leaves
  • 2 potatoes, cut inch 1/2 square (medium)
  • 1 tomato (2 if using Roma tomato), diced
  • 1 onion, diced (medium)
  • 2 cloves garlic, minced
  • 2 tablespoons cooking oil
  • salt to taste
Heat up oil in a pan (or wok). Sauté garlic until brown, then add the onion and tomatoes. Keep stirring until wilted. Add pork and the rest of the ingredients, except the potato. Keep sautéing and stirring until a sauce or juice starts forming (approx 5-10 minutes). Add tomato sauce and water, approximately level with the meat. Keep boiling, stirring occasionally. until the meat is tender (add more water if necessary.) Add potatoes, stirring occasionally until cooked. Keep simmering until the sauce starts thickening up. Add salt as needed to taste.
