Roast Pork Loin in Horseradish Crust Recipe

  • 1 cup bread crumbs
  • 2 tablespoons olive oil
  • 2 tablespoons drained bottled horseradish
  • 1 piece boneless pork loin (1 lb piece)
  • 1 1/2 tablespoons dijon mustard
  • 1 1/2 tablespoons mayonnaise
Preheat oven to 475. Pat pork dry and season with salt and pepper. In a skillet, heat olive oil over moderately high heat until hot but not smoking. Brown pork on all sides. Transfer pork to shallow baking pan. In small bowl, mix mustard, mayonnaise and horseradish. Coat top and sides evenly with mixture. Press bread crumbs evenly on top and sides. Roast pork in middle of oven until internal temperature reaches 155 with a meat thermometer.
