Cactus Chicken Gumbo Recipe

  • 1 1/2 cups uncooked Minute Rice
  • 1 teaspoon cilantro
  • 15 ounces tortilla soup
  • 1 can black beans, drained and rinsed
  • 1 1/2 - 2 lbs boneless skinless chicken breast
  • Lawrys seasoned salt
  • 1 cup shredded fiesta blend cheese
  • 1/2 cup Salsa
  • 1/2 cup sour cream
  • 1 package hint of lime tortilla chips
Prepare minute rice as directed adding the cilantro to the rice. Cube the chicken breasts, season with Lawry's seasoned salt to taste and cook in a non-stick skillet until done. Heat tortilla soup in a bowl. Heat black beans. Dump cooked rice in a large bowl. Spoon tortilla soup over the rice. Layer onto the mixture; black beans, cooked chicken, shredded cheese, salsa and sour cream. Top with broken hint of lime tortilla chips and/or serve the chips on the side.
