1 2 3 Jambalaya Recipe

Ingredients
  • 1 onion, diced (large)
  • 1 green bell pepper, diced (large)
  • 1 pound smoked sausage, cut into 1/4 inch slices
  • 1 tablespoon olive oil
  • 4 cups chopped cooked chicken
  • 3 cups uncooked long grain rice
  • 2 cans French onion soup, undiluted (10 1/2 ounce cans)
  • 1 can chicken broth (14 1/2 ounce can)
  • 1 can beef broth (14 1/2 ounce can)
  • 2 teaspoons Creole seasoning
  • 2 teaspoons hot sauce
  • Garnish: fresh cilantro sprigs
Directions
Heat olive oil. Sauté first 3 ingredients in the olive oil in a Dutch Oven until sausage is brown. Stir in chicken and the other ingredients. Bake, covered, at 350° for 40 minutes. Garnish.
