Grilled Chicken with Fresh Pineapple Salsa Recipe

  • 4 skinless, boneless chicken breasts
  • Marinade
  • 1/3 cup Lime juice
  • 1/3 cup olive oil
  • 1 teaspoon Salt
  • 1/4 teaspoon pepper
  • Fresh Pineapple Salsa
  • 2 cups fresh pineapple, diced small
  • 1 tablespoon chopped fresh cilantro
  • 1/3 cup red onion, diced small
  • 1 tablespoon olive oil
  • juice from 1/2 lime
  • 1/2 jalapeno pepper (or less to taste), seeds removed, diced small
Chicken: Combine marinade ingredients. Marinate chicken 4 to 6 hours. Grill chicken and serve with salsa.

Salsa: Toss pineapple, cilantro, red onion, jalapeno pepper, lime juice and olive oil in a bowl. Season to taste with salt and pepper. Serve with chicken (or can be served as an appetizer with chips).
