There are precautions that should be taken when
preparing stuffing to reduce the risk of the growth of harmful bacteria. The turkey should not be overstuffed because it will expand during the cooking process and some of it may not cook thoroughly because of the density of the stuffing inside the turkey. It is important that the stuffing reaches a temperature of at least 165 degrees F. all the way to the center. If you need more stuffing than what will fit without overstuffing the turkey, cook the extra in a separate casserole dish.
