Do Not Overcook Beef Steaks

Follow the steps below for grilling a beef steak.
  • Preheat the grill for even temperature throughout. For charcoal grills the coals should be spread out evenly on the bottom and a gas grill should have all burners lit.
  • Using direct heat grilling, cook the steaks over medium high heat to desired doneness. For medium-rare cook to 145 degrees F., for medium cook to 150 degrees F., and for medium-well cook to 160 degrees F. Turn once during cooking time.
  • Visually check for doneness or use an instant read thermometer to see if it has reached its proper doneness.
  • Remove steaks from the grill just before they reach the desired doneness and let stand for 5 to 10 minutes before serving.
