An antioxidant that is often considered to assist in preventing some types of cancers and may also help to prevent strokes by providing a healthier heart. Beta Carotene is a common nutrient found in carrots. It is a fat-soluable substance so when carrots are cooked, the Beta Carotene can absorb other healthy oils, such as olive oil which will help the body to more effectively absorb the Beta Carotene. However, do not overcook foods containing antioxidants in order to retain the nutrients.
