A traditional Mexican stew or soup that is made by combining honeycomb beef tripe, pazole (hominy, pork, and red chiles), garlic, a pig's, a calf's foot or bone marrow, onions, dried chiles and other various seasonings. It is a hearty aromatic dish that is served steaming hot garnished with bits of spicy chilies and a tangy lime wedge, often as a late night appetizer. It is considered by many to serve as a hangover remedy, eaten just prior to bedtime.
