A traditional Swedish, Finnish or Norwegian bread made from a dough with rye flour or combinations of flours such as wheat, barley, and potato and leavened with leavening agents. Available in round, rectangular or triangular shapes, flatbreads such as Kn├Ąckebrot are common types served in Scandanavian homes. Very thin and crispy-textured, like a cracker, flatbreads are often served as an appetizer with gjetost cheese or with soups, salads, and main dishes. This type of flatbread may also be referred to as a crispbread.
