A type of vinegar that has been produced by soaking herbs in the solution in order to absorb the flavor of the selected herbs. This type of vinegar is useful in salad dressings and in cooking. Among the most popular herbs used to flavor vinegar are dill, basil, tarragon, rosemary, and lavender. Homemade herb vinegar can be made by simply placing herbs in white distilled vinegar and allowing them to soak for at least a few days. The vinegar will take on the aroma and flavor of the herbs.
