A fresh cheese, popular in Spain and Mexico that is white in color and grainy in texture. As a soft, spreadable cheese, it provides a mildly sweet flavor similar to fresh milk. It is most often served in salads, used as an appetizer spread or dip for crackers, selected for use in baked dishes, or as a stuffing for pasta and enchiladas. Requesón cheese is considered to be the same as Ricotta, which can be used as a substitute.
