Fresh Mizithra is soft, resembling cottage cheese and the aged is shaped like a large egg and is firm with a pungent aroma and mild flavor. The aged cheese, known as Xinomyzithra, makes a perfect grating cheese. Mizithra is also spelled Myzithra.
