Hi! This is Laurie from RecipeTips.com, and today we are going to be making peanut brittle. Start by generously buttering a large cookie sheet. Add two cups of white sugar to a saucepan, and to that add one cup of water and one cup of light corn syrup, and you want to stir that with a wooden spoon over low heat until the sugar is dissolved. Once the sugar has dissolved, turn the heat up to medium-high and bring it to a boil. Once the mixture starts to boil, add in one-half teaspoon of salt and two cups of raw peanuts. Stir that all together and then return it to a boil. Once the mixture has started to boil, add a candy thermometer to the pan, and continue to boil until the temperature reaches 300 degrees. Remove the thermometer from the peanut mixture when it reaches 300 degrees, and immediately remove the pan from the heat. Add one-half teaspoon of vanilla extract, one teaspoon of baking soda, and two tablespoons of butter. Mix that in until it is all combined, and immediately pour it into your buttered pan.
