Directions
Peel and cut potatoes into small pieces. Boil for 10-12 minutes.

Drain and place the potatoes in a baking sheet. Drizzle with olive oil and sprinkle with garlic powder and fresh rosemary. Bake at 425 degrees 35-40 minutes or until golden brown.

NOTE: You can use dried rosemary, but use much less.

Add green beans to the bacon and onion and sauté on low heat for at least 15 minutes or until ready to serve.

  • 1/2 teaspoon baking powder

  • 1/2 cup hot water

  • 1 1/2 cups sugar
  • 3 eggs
  • 1 cup buttermilk
  • 1 1/2 teaspoons vanilla
  • FROSTING:
  • 6 ounces white chocolate
  • 2 1/2 tablespoons flour
  • 1 cup milk
  • 1 cup butter - softened
  • 1 cup sugar
  • 1 teaspoon vanilla

CAKE:
  • Grease and flour two 8-inch round cake pans and set aside. Preheat the oven to 350 degrees F.
  • Sift the flour, baking soda, baking powder, and salt together; set aside.
  • In a small saucepan, over low heat, melt the white chocolate together with the hot water; stir until smooth. Allow this mixture to cool to room temperature.
  • Cream the butter and the sugar together in a large mixing bowl until fluffy. Begin adding the eggs one at a time, beating well after adding each.
  • Stir in the flour mixture by hand, alternating back and forth with the buttermilk until all has been incorporated.
  • Mix in the melted white chocolate and vanilla.
  • Once the batter is well mixed, pour it into the prepared cake pans and bake for 30 minutes or just until a toothpick inserted in the middle comes out clean.
  • Remove from the oven and allow to cool for 10 minutes before removing from the pans. Place on a rack to cool completely before frosting.
FROSTING:
  • In a saucepan, add the white chocolate, flour, and milk. Stirring constantly, cook over medium heat until very thick.
  • Remove from heat and allow to cool completely.
  • In a mixing bowl, cream together the butter, sugar, and vanilla until fluffy. Slowly mix in the cooled white chocolate mixture.
  • Once chocolate mixture is mixed in, beat at high speed until the frosting is the consistency of whipped cream.
  • Frost the cake by adding a layer of frosting between the cake layers and then spread remaining frosting on the sides and top of the cake.
  • Garnish the cake with chocolate curls on top.

  • 4 cups cooked rice
  • 3 tablespoons oil, divided
  • 1 egg
  • 1 clove garlic, minced
  • 4 green onions
  • 1/2 pound chicken, pork, or shrimp
  • 1/2 cup water chestnuts
  • 1/4 cup soy sauce
  • 1 cup green peas
Directions
Chill rice in refrigerator.

Place 1 tablespoon oil in wok, scramble egg, remove and set aside.

Add oil, garlic and onion. Stir fry for 1 minute. Stir in meat and water chestnuts. Cook about 4 minutes. Stir in cold rice and soy sauce until mixed, then add peas and chopped egg. Stir until hot.

  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon brown sugar
  • 1 head cabbage, thinly sliced
  • 1 tablespoon olive oil
  • 1 bag shredded carrots
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 pound ground pork (chopped left over pork works well too)
  • 6 scallions, thinly sliced
  • 16 egg roll wrappers
  • 1 bottled or homeade sweet-n-sour sauce and spicy mustard for dipping
  • salt and peper
Directions
  • In small bowl combine soy sauce, vinegar and sugar.
  • In large skillet heat olive oil over medium heat. Add cabbage, carrots, garlic and ginger. Season with salt and pepper; cook, tossing vegetables until tender (about 3 5 minutes).
  • Raise heat to high, add pork and soy mixture. Cook until pork is no longer pink, 7-10 minutes.
  • Remove from heat, transfer to bowl to cool.
  • Lay wrappers flat on work surface and assemble one at a time.
    DEEP FRYING:
  • Heat 6 cups of vegetable oil until it reaches 250° F. Cook in batches of 4, fry until golden brown, turning accasionally. Drain on paper towels. Serve with sauce.
    BAKING:
  • Preheat oven to 400° F, lightly oil a baking sheet, place egg rolls on sheet and brush with oil. Bake until golden brown (about 15 minutes). Serve with sauce.
    FREEZING:
  • Prepare egg rolls as directed above. Freeze in a single layer until firm. Transfer to freezer bags. Can be frozen for up to 3 months. No need to thaw before baking or frying.

  • 1 stick cinnamon
  • 6 cardamom seeds, crushed

  • In a small sauce pan, combine first 6 ingredients. Bring to boil.
  • Reduce heat. Cover and simmer for 5 minutes.
  • Stir in milk. Return to a boil. Boil for 1 minute then remove tea bags and strain.

  • 16 ounces dried Great Northern beans
  • 1 cup diced sweet yellow onion
  • 3 cloves garlic, diced
  • 1 tablespoon oil
  • 1 1/2 quarts chicken broth or stock
  • 2 bay leaves
  • 2 cups peeled and diced potatoes
  • 2 stalks celery, diced
  • 3 carrots, peeled and diced
  • 1 1/2 pounds to 2 1/2 pound ham shank
  • 1/4 teaspoon black ground pepper

  • 1/4 teaspoon ground cumin
Directions
  • Soak beans overnight in salt water, drain.
  • In bottom of stock pot, add oil and sauté onions and garlic over medium heat until softened (about 4 to 5 minutes).
  • Remove from heat.
  • Add remaining vegetables, seasonings, ham shank, drained beans, and chicken stock or broth.
  • Bring to a boil. Reduce heat to simmer, cover and cook 1 1/2 hours.
  • Remove ham shank from soup. Allow ham shank to cool slightly. Remove meat from bone. Discard bones, fat, and skin. Add meat to soup.
  • Continue cooking on simmer for an additional 30 to 45 minutes or until beans are soft.

  • Butter one side of each slice of bread. On 4 slices of bread, buttered side down, arrange slices of Swiss cheese, corned beef, sauerkraut and dressing. Cover with the remaining slices of bread buttered side up.
  • In a large non-stick skillet over medium high heat, place the sandwiches butter side down and brown on each side until cheese starts to melt.
  • Slice in half and serve. Garnish with a pickle. (If you don't have Thousand Island dressing on hand, you may use a mixture of 1/2 cup mayonnaise, 1 tablespoon of ketchup and salt and pepper to taste.)

Directions
In a jar with a tight fitting lid, combine oil, sugar, vinegar, salt and pepper. Shake well. Chill for 1 hour.

Just before serving combine lettuce, bacon with toasted almonds and sesame seeds in a large bowl. Add dressing and toss. Top with chow mein noodles, if desired.

  • 4 large boneless country-style ribs

  • 2 onions
  • 1/2 cup barbeque sauce, bottled OR
  • make your own:
  • 1/2 cup ketchup
  • 1 tablespoon prepared mustard
  • 1 teaspoon molasses or honey
  • 1 teaspoon chili powder and/or garlic powder
  • 1/2 cup beer
  • 1 teaspoon cornstarch (optional, for thickening sauce)
Directions
  • Remove any large areas of fat from meat and salt and pepper both sides. Chop onions and spread over bottom of cooker. Put meat on onions. Mix the bottled barbeque with the beer; OR mix the ketchup, mustard, molasses (or honey) and chili powder (and/or garlic powder) together and then mix with the beer.
  • Pour the sauce mixture over meat, cover and cook on HIGH: 4-5 hours, on LOW: 8-10 hours. (Time for your particular cooker may vary somewhat from these times, so check for doneness a little earlier.)
  • To serve, lift meat and onions out with spatula. Pour liquid into a narrow jar or glass, let stand 1 - 2 minutes, and spoon off the fat that rises to the top.
  • Pour sauce over meat. If you wish to thicken sauce to make it more gravy-like, mix 1 teaspoon cornstarch into 1 tablespoon water and add to sauce. Boil in a small saucepan for 2-3 minutes, or until clear. Spoon over meat.

  • 1 cauliflower head, about 2 pounds
  • 2 tablespoons butter
  • 1 small lemon (juice and zest)
  • 1 tablespoon chopped parsley
  • salt, for steaming water

  • Trim cauliflower: remove leaves and leaf stalks. Turn head over and trim out the center of the core, but not so much that the florets fall apart.
  • Heat about 2 inches salted water in the bottom of a steamer. Put whole head in the steamer basket and cook just until a sharp knife can pierce it with a slight resistance, 10-20 minutes, depending on the size of the head. Don't overcook; it will continue to cook from residual heat.
  • While the cauliflower cooks, heat butter in a small saucepan until it just begins to brown. This will not take very long--watch closely so it doesn't burn. Zest the lemon, then cut in half and squeeze out the juice. Add to browned butter. Chop parsley and add to butter.
  • When the cauliflower is done, remove to serving dish and spoon sauce over. Slice into quarters to serve.

  • 1 egg - lightly beaten
  • 1 can sweetened condensed milk
  • 1 egg

  • 1 cup chopped pecans
  • 1 cup white and chocolate swirl chips - divided
Directions
  • Preheat oven to 350° F.
  • Combine cake mix, butter, and beaten egg in a mixing bowl. Using a pastry blender cut the butter into the other ingredients until mixture is crumbly.
  • Press this into the bottom of the ungreased baking pan.
  • Combine the sweetened condensed milk with the second egg and the vanilla. Beat until well combined.
  • Stir in 1 cup of the coconut, the pecans, and 1/2 cup of chips. Spread this mixture over the bottom layer.
  • Sprinkle the remaining coconut and chips over the top. Press the chips slightly into the middle layer to help them stick.
  • Bake for 30 minutes or until the center is almost firm. The center will firm up when it cools. Cut into bars and serve.

    • 1 pound pork tenderloin
    • 29 ounces low sodium chicken stock (2 cans 14.5 oz)
    • 2 small onions, finely chopped
    • 1/2 fresh jalapeno chili with seeds, finely chopped, or 4-6 canned jalapeno rings
    • 1/2 bunch fresh cilantro 21/2-3 cups plus a frew sprigs for garnish
    • 1/4 teaspoon ground cumin
    • 1 bay leaf
    • coarse salt and pepper to taste
    • 2 tablespoons unsalted butter, melted
    • 1 tablespoon olive oil
    • 1 avocado, halved, peeled, thinly sliced, sprinkled with lemon juice to keep it from turning brown.
    • Mexican Corn Cakes
    • 1 1/2 cups masa harina
    • 1/2 cup all purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon coarse salt
    • 1/2 cup grated cotija cheese (can substitute shredded parmesan cheese)
    • 2 cups coarsely chopped fresh or frozen corn kernals (approximately 2 large or 3 medium fresh sweetcorn)
    • 1 cup warm water - use only as much as needed
    • 6 tablespoons vegetable oil for frying

    Spiced Shredded Pork
    • Preheat broiler.
    • Combine pork, stock, half of the onions, jalapeno, cilantro, cumin, bay leaf and 1/2 teaspoon of the salt in medium saucepan.
    • Bring to a boil.
    • Cover, reduce to a simmer.
    • Cook until pork registers 140° on an instant read thermometer. (Approximately 10-15 minutes). The meat will be slightly pink in the middle but very tender.
    • Transfer the meat to a cutting board.
    • Shred the meat into 2 inch peices with two forks. (Discard water from saucepan).
    • Put meat on a baking sheet, add the rest of the chopped onions.
    • Melt the butter, mix the butter with olive oil and pour over the meat and onions.
    • Season with salt and pepper.
    • Broil until golden brown (7-10 minutes).
    • Watch carefully, stir occassionally.

    Mexican Corn Cakes
    • Whisk together masa harina, flour, baking powder and salt in a large bowl.
    • Stir in corn and cheese.
    • Add 1/4 cup water at a time, stirring after each addition until mixture holds together. (Usually takes approximately 1 cup total.)
    • Heat 1/4 c oil in fry pan or cast iron skillet over medium heat until hot but not smoking.
    • Meanwhile, shape 1/3 cup of mixture with your hands to form a patty that is approximately 1/3 inch think.
    • Repeat with remaining mixture, making 8 patties.
    • Working in batches of 4, fry patties, turning once, until golden brown. This takes approximately 2-4 minutes per side.
    • Using a slotted spoon, transfer to a paper towel to drain.
    • If pan becomes dry, add more oil as you go.
    • Cover patties with foil to keep them warm until ready to serve.

    Assembly
    • Top each corn cake with 3 avocado slices, a heaping 1/3 cup pork, 2 tomato wedges and 1 tablespoon sour cream.
    • Garnish with cilantro.

    • 1 cup warm water - use only as much as you need
    • 5 tablespoons vegetable oil for frying
    Directions
    • Whisk together masa harina, flour, baking powder and salt in a large bowl.
    • Stir in corn and cheese.
    • Add 1/4 cup water at a time, stirring after each addition until mixture holds together. (Usually takes approximately 1 cup total.)
    • Heat 1/4 c oil in fry pan or cast iron skillet over medium heat until hot but not smoking.
    • Meanwhile, shape 1/3 cup of mixture with your hands to form a patty that is approximately 1/3 inch think.
    • Repeat with remaining mixture, making 8 patties.
    • Working in batches of 4, fry patties, turning once, until golden brown. This takes approximately 2-4 minutes per side.
    • Using a slotted spoon, transfer to a paper towel to drain.
    • If pan becomes dry, add more oil as you go.
    • Cover patties with foil to keep them warm until ready to serve.

    • 10 ounces frozen corn - thawed
    • 1 red bell pepper - chopped
    • 3 green onions - chopped

    • salt and pepper to taste
    Directions
    • Cut up the peppers and onions. Dice the jalapeno. Set these ingredients aside.
    • In a large skillet, melt the butter over medium-high heat.
    • Add in the corn, bell pepper and onions.
    • Turn down the heat to medium and cook the vegetables for approximately 10 minutes, stir frequently. The vegetables should be cook until just tender.
    • Add the salsa and jalapeno. Stir and continue to cook until all ingredients are hot.
    • Serve immediately while still warm.

    • 4 boneless, skinless, chicken breasts
    • 1 tablespoon chili powder
    • 2 teaspoons ground cumin
    • 1 clove garlic - minced
    • 2 tablespoons jalapeños - seeded and chopped
    • 1 bunch green onions - chopped
    • 1 can black beans (15 oz.) - drained and rinsed
    • 2 cups Asiago cheese - shredded or crumbled feta
    • 1 pound linguini - cooked
    • 1/2 cup cilantro - fresh, chopped
    • 2 tomatoes - chopped
    Directions
    • Heat grill to medium.
    • Place chicken breasts in large plastic bag.
    • Add garlic, chili powder and cumin. Seal bag, shake to combine.
    • Grill over medium heat until no longer pink in center, 7-10 minutes each side.
    • Note: you may also sauté in skillet with 3 tablespoons olive oil.
    • In medium skillet, add 1 tablespoon olive oil.
    • Over medium heat, add jalapeños and green onion. Sauté 3-4 minutes.
    • Stir in black beans. Heat for 3-5 minutes.
    • Place cooked pasta in large serving bowl.
    • In the center, mound black beans. Around sides, place chopped tomatoes and grilled chicken that has been cut into bite size pieces.
    • Top all with cheese and cilantro.
    • Right before serving, toss to combine.

    • 1 garlic clove, peeled, sliced in half (large)
    • 1/4 cup extra virgin olive oil
    • 2 heads Romaine lettuce (large heads)
    • 4 tablespoons egg substitute
    • 1/3 cup Worcestershire sauce
    • 3 tablespoons fresh lemon juice
    • 1/2 teaspoon salt
    • 1/4 teaspoon fresh cracked pepper
    • 1/2 cup grated Parmesan cheese
    • 3 slices French bread, cut into 1-inch cubes
    Directions
    To make garlic olive oil, place garlic clove halves in 1/4 cup olive oil and set aside while you prepare your salad and croutons.

    Cut romaine lettuce lengthwise through the center of the rib and then into 1 1/2 inch pieces.

    With wire whisk, mix together the egg substitute, garlic olive oil less 1 tablespoon, Worcestershire sauce, lemon juice, salt and pepper.

    In medium size skillet, on medium high heat, add the 1 tablespoon garlic olive oil. Add the cubed bread and toss until cubes are crisp.

    To the prepared romaine pieces, add the dressing mixture and toss. Add the Parmesan cheese and toss together with fresh hot crusty croutons.
