When cooking fish this Lenten season or anytime, check doneness by looking for it to have an opaque appearance. When poked with a knife, the fish should be firm with meat that flakes and separates slightly.
If you don't have a thermometer, pierce the turkey with a fork and check for juices to be clear or cut thickest part and check for completely opaque meat. Also drumsticks should move up and down easily.
When checking if your ham is done, it can be accomplished in basically the same manner for whatever cooking method you are using. It can be done most accurately with a thermometer, but visually and by piercing the ham you can tell if it is done.
