Rhubarb Orange Sauce Recipe

1 pound rhubarb
2/3 cup sugar
2 tablespoons water
3 tablespoons frozen orange juice concentrate
pinch salt
1/2 teaspoon vanilla

Wash and trim rhubarb. Slice ribs about 1/2 inch thick.
Put all ingredients except vanilla into a saucepan and simmer until rhubarb is soft, about 10 minutes. Stir in vanilla.
Use sauce warm or chill. Keeps, refrigerated and covered, for a week or more.
