Confetti Vegetable Casserole 2 Recipe

Ingredients
  • 2 zucchini squash
  • 1/2 head cauliflower
  • 2 yellow squash
  • 1/2 bell pepper
  • 1 broccoli stalk (medium)
  • 8 ounces mushrooms
  • 1/2 yellow onion
  • 2 tomatoes, cut into wedges
  • 1/2 or more cup Parmesan cheese
Directions
Layer sliced vegetables and flowerets alternating colors in a glass casserole dish. Sprinkle Parmesan cheese on top. Season to taste with lemon pepper, tarragon, dill weed, oregano or other favorites. Cover with plastic wrap and microwave on high for 14 minutes.

Serves a crowd. May also be baked covered at 350 for 30 minutes.
