  • 4 chicken breasts, boneless skinless
  • 1 cup flour
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 eggs, beaten
  • 1 tablespoon water
  • 1 cup seasoned bread crumbs
  • 1 cup parmesan cheese, finely ground
  • 2 tablespoons butter
  • 2 tablespoons oil

Place chicken breasts in a zip lock bag. Using a rolling pin, pound the chicken until 1/4 inch thickness. Combine flour, pepper and salt in a shallow bowl. Combine eggs and water in another shallow bowl. Combine bread crumbs and parmesan cheese in a another shallow bowl. Heat butter and oil in a large skillet over medium high heat. Dredge each chicken breast in the flour mixture, then the egg mixture, then the cheese mixture. Place in preheated skillet with butter and oil. Brown on each side, 5-7 minutes, until golden brown and no longer pink in the center. You can keep in 225° oven to keep warm, if necessary.
