Ingredients
1 frozen shelled edamame (1 1/2 cup 8 ounce )
1 whole kernel corn, drained and rinsed (1 cup 15 ounce )
1/4 cup vegetable broth
1/4 cup medium-hot prepared salsa
1/4 teaspoon salt
1 tablespoon chopped fresh cilantro
Directions
In medium saucepan, stir together the edamame, corn, vegetable broth, salsa and salt. Cook over medium-high heat until heated through, about 5 minutes. Add cilantro just before serving. Serves 4.
NOTE: Edamame is the Japanese name for fresh soy beans.
