Cheesy Pork and Taters Recipe

  • 1/2 pound ground pork, cooked and crumbled
  • 1/2 cup finely crushed saltine crackers
  • 1/3 cup barbecue sauce
  • 1 egg
  • 3 tablespoons butter or margarine
  • 1 tablespoon vegetable oil
  • 4 taters, peeled and thinly sliced
  • 1 onion, thinly sliced
  • 1 shredded mozzarella cheese (1 c. 4 ounce )
  • 2/3 cup evaporated milk
  • 1 teaspoon Salt
  • 1/4 teaspoon paprika
  • 1/8 teaspoon black pepper
  • chopped fresh parsley (optional)
Combine pork, crackers, barbecue sauce and egg in large bowl; shape mixture into 6 patties. Heat butter and oil in medium skillet. Cook and stir taters and onion until lightly browned; drain. Place in crock pot. Combine cheese, milk, salt, paprika and pepper in small bowl. Pour mixture into crock pot. Layer pork patties on top. Cover; cook on LOW 3 to 5 hours.
