Chicken and Gnocchi Recipe

Ingredients
  • 2 tablespoons butter
  • 1 pound chicken breasts
  • 1 tablespoon garlic, minced
  • 1 package gnocchi (potato dumplings)
  • 1 cup milk
  • 1 can condensed cream of chicken or mushroom soup
  • 1 can mushrooms, drained
  • 1/4 cup shredded cheese
  • 1/4 cup Parmesan Cheese
  • 2 tablespoons roasted red peppers, diced
  • 2 teaspoons dried dill
  • 2 teaspoons garlic powder

In a medium heated skillet, melt butter.

Salt and pepper chicken on both sides. Add chicken and garlic to skillet. When browned on both sides and cooked through, take out of pan and set aside.

Turn heat down to medium low. Add milk, soup, mushrooms, cheese, red peppers, dill and garlic powder to the pan the chicken was cooked in. Scrape up the browned bits on the bottom of the skillet.

While making cream sauce, cook gnocchi according to package directions.

Dice or shred the chicken.

When the gnocchi is finished cooking, drain and add gnocchi and chicken to the creamed mixture. Heat through, stirring occasionally.

"I was amazed at how good this was. The gnocchi texture takes some getting used to but you just can't stop eating it. There did seem to be alot of dill when I was adding it, but it tasted great. The sauce was really great with broccoli. I used cream of mushroom soup and added a small amount of chicken bouillion for added chicken flavor."
