Brown Rice with Pecans or Walnuts Recipe

  • 4 tablespoons vegetable oil-divided
  • 2 cups uncooked brown rice
  • 4 1/2 cups water
  • 1 teaspoon Salt
  • 1 piece pecans or walnuts (1 cup pieces) (small pieces)
Heat 2 T oil in a large saucepan over medium-high heat, add rice and sauté stirring about 2 min. Add water and salt, heat to boiling, cook uncovered over med to low heat until water is absorbed and rice is tender about 45 min. Pour the oil and nuts over cooked rice. Toss with a fork and serve. May add a dollop of cool whip. Serves 8.
