Apple Griddle Pancakes Recipe

A delicious and nutritious Autumn breakfast. These heavy pancakes have finely diced apples in them and a touch of cinnamon to warm them right up. Perfect with some warm maple syrup drizzled over the top.

Ingredients
  • 1/4 teaspoon nutmeg
  • 1/4 cup butter, melted
  • 1/4 cup applesauce
  • 1 egg, well beaten
  • 2 cups milk
  • 1/2 teaspoon vanilla
  • 2 cups apples, peeled, finely diced
  • 2 1/2 cups flour
  • 2 1/2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 2 tablespoons sugar

In a large bowl, mix together melted butter, applesauce, eggs, milk, vanilla and apple.

Add in flour, baking powder, cinnamon, sugar and nutmeg; stir until just combined.

Preheat a griddle or frying pan over medium heat.

Scoop onto the hot surface and let cook for a couple of minutes on each side, flipping half way through.

Best if served warm, topped with butter and maple syrup.
