Honey Herbed Cornish Hens Recipe

  • 4 Cornish hens (rinsed and patted dry)
  • 2 tablespoons olive oil
  • 2 tablespoons Lemon Juice
  • 2 tablespoons honey
  • 2 teaspoons fresh thyme, chopped
  • 2 teaspoons fresh oregano, chopped
  • 1/2 teaspoon Salt
  • 1/8 teaspoon black pepper
Split each hen and trim any fat. Brush oil onto large shallow pan (15"x10"x1"). Heat oven to 400° (place pan in oven). In small bowl, whisk together lemon juice, honey, thyme, and oregano. Season hens with salt and pepper. Place hens in pan, skin side down. Brush with half of honey mixture. Bake at 400° for 30 minutes. Remove pan and turn over hens. Brush with remaining honey mixture. Cook for 20 to 30 minutes or until internal temperature of hen reaches 180°. Transfer to plate. Drain drippings from pan skimming off the fat. Pour into a gravy boat.
