Estufao (Chamorro Potroast) Recipe

  • 2 pounds pot roast (London broil or sirloin tip roast is fine)
  • 1/2 cup water
  • 1 onion
  • 2 cloves garlic
  • 1 teaspoon basil
  • 1/4 cup sugar
  • 1/4 cup soy sauce
  • 1 teaspoon pepper
Combine all ingredients into a baking dish and mix well. Place pot roast and cover. Bake in oven at 350° for 2 hours.

Remove roast from pan and combine 1/2 cup flour with 1 cup of water. Mix well and set aside. Transfer drippings to a pot and add to flour and water mixture. Heat the mixture at medium heat, stirring constantly, until thickened.

Place roast on cutting board and cut into strips. Return to pan and cover with gravy.

Serve and enjoy.
