Tropical Fish Fillets with Papaya Sauce Recipe

Preheat oven to 350 degrees.

Place fish in a shallow baking pan. Drizzle olive oil and squeeze lime juice over both sides of fish. Season both sides of fish with Lemon Pepper and cilantro to taste.

Cover dish lightly with aluminum foil and bake in the oven for 15-20 minutes, until fish is just flaking.

To make the sauce, cut the papaya in half and scoop out the seeds. Peel the skin from the halves and chop the flesh. Place flesh of papaya into food processor or blender, and add the orange and lime juice, oil and Cajun Blend to taste. Process until smooth.

Transfer the sauce to a small saucepan and heat through gently for 3-4 minutes. Season to taste with sea salt and fresh ground pepper.

Plate the fish fillets in their cooking juices with the sauce spooned over, garnished with lime wedges. Serve with coconut rice (recipe in side dish section of cookbook)
