Apple Crumb Pie or Blushing Peach Pie Recipe

  • 1 9-inch pie shell (unbaked)
  • 5 peeled and quartered Cortland or Jonathan apples
  • 1 cup Sugar
  • 1/2 cup flour
  • 1/4 cup butter or margarine
  • 1/2 teaspoon cinnamon
Blend the above four ingredients in a food processor until thoroughly mixed and the consistency of cornmeal. (A hand pastry blender can be used for the first step.) Sprinkle 1/4 of the mixture on the bottom of the pie shell. Place apples in the shell and top with the remaining crumb mixture. Bake at 400° about 50 minutes or until the pie is bubbly in the center. *A little water can be added if the pie seems dry. VARIATION: Blushing Fresh Peach Pie (Omit the cinnamon from the crumb mixture.) Peel and cut 5 to 7 peaches in half. Place peach halves with the red centers up in the pie shell. Follow directions for apple pie above.
