Eggplant Parmesan 2 Recipe

  • 1 eggplants, peeled (medium)
  • 2 Eggs, beaten
  • 1/2 cup matzo meal
  • 1/4 cup Oil for frying
  • Shredded Cheese
  • 1 Flavored Pasta Sauce (400 gallon 12 ounce )
Slice eggplant into 1/4 inch slices. Dip slices in egg, then in matzo meal. Fry in oil until light brown. In baking pan layer eggplant then sauce, repeating until all of eggplant is used. Top with the shredded cheese. Bake covered at 350 F for 40-45 minutes.
