Cheesy Party Potatoes Recipe

These cheesy potatoes are the potatoes everyone loves. With or without the onion, these are sure to disappear quickly when you serve them.

  • 1/2 pound butter or margarine
  • 1 pint half & half
  • 2/3 pound Velveeta cheese
  • 32 ounces shredded hash browns, thawed
  • 1/2 cup onion, chopped (optional)
  • 1 cup shredded Cheddar cheese

  • Preheat oven to 350° F. Butter sides and bottom of a 9 x 13 baking pan.
  • Melt butter. Add Half & Half and Velveeta cheese. Heat on medium low until cheese is melted.
  • Break up pieces of potatoes in baking pan and spread out evenly. Top with onions, salt & pepper.
  • Pour melted cheese mixture over potatoes. Sprinkle top with shredded Cheddar cheese.
  • Bake uncovered for 1 hour.

"We loved these potatoes. The kids wanted to know if I would make them again! I even made them up a week ahead of time and stuck them in the freezer. I wasn't sure I should with the half & half in it but I let them thaw before baking and they turned out great."
