Autumn Vegetable Succatash Recipe

Ingredients
  • 1/2 cup unsalted butter
  • 1 Onion- diced (Medium)
  • 2 cloves Garlic- chopped
  • 2 Red Bell Peppers- diced
  • 2 Zucchini- diced
  • 2 Yellow Summer Squash- diced
  • 1 cup frozen lima beans
  • 1 cup fresh or frozen corn
  • Salt and Pepper to taste
  • 2 tablespoons Fresh Sage- chopped
Directions
Melt butter in skillet. Add onion and cook until translucent.

Add garlic, bell peppers, zucchini, squash, lima beans and corn. Season with salt and pepper. Cook (stirring) until vegetables are done. Approximately 10 minutes.

Stir in sage and serve.
