Mother's Okoshi Recipe

Ingredients
  • 1 pound dried rice (cooked)
  • 1 cup light brown sugar (loosely packed)
  • 1/2 cup Karo pancake and waffle syrup
  • 3/4 cup Spanish peanuts
Directions
Deep fry the rice and drain on paper towel. In a large kettle bring to boil over medium heat, the brown sugar and syrup, stirring constantly. Let bubble for 2 minutes. Pour in the peanuts and rice, and mix thoroughly working quickly. Remove from heat. Pour into greased pan and spread out evenly. Press down and pack firmly with hands. Cut into desired pieces at once. Do not wait till it cools as the pieces will not slice evenly and neatly.
