Taco Velveeta Dip Recipe

  • 2 pounds Velveeta cheese
  • 2 pounds ground beef
  • 1 can Rotel tomatoes w/green chilies
  • 1 can diced tomatoes
  • 1 packet taco seasoning mix
Brown ground beef, drain and put in slow cooker. Cube cheese and add. Pour in tomatoes with chilies, drain diced tomatoes and save the juice. Add 1/2 of taco packet. Check to see if hot enough. If not, add more seasoning. If need more liquid add the reserved tomato juice. Leave on low heat until cheese is melted and the consistency is to your liking. Simmer 1 to 1 1/2 hours. Serve with chips, crackers or cube bread. Also, as taco soup.
