Yellow Rice and Chicken Recipe

  • 3/4 cup water
  • 1/4 cup olive oil
  • 1 bay leaf
  • 1 onion - diced
  • 2 tablespoons red or green pepper - diced (optional)
  • 7 boneless, skinless chicken breasts
  • 3 boneless pork chops (optional)
  • salt and pepper - to taste
  • Bijol or Virgo flavoring - enough to give a nice orange/yellow color
  • 1/8 teaspoon cumin seed
  • 2 cups uncooked rice
  • 2 beers
Sauté the first 9 ingredients for approximately 30 minutes. Drain off excess olive oil. Add beer and water (or water only) to selected quantity of rice. Cook from 25 to 40 minutes on top of the stove on low heat, as needed to cook the rice.
