Chicken Piccata 14 Recipe

  • 1/2 teaspoon Salt
  • 1/4 cup flour
  • 1 1/2 pounds chicken breast (cutlets work best)
  • 2 tablespoons butter
  • 1 tablespoon capers (but can add more to taste)
  • 2 tablespoons Lemon Juice
  • 1/4 cup white cooking wine
Mix salt and flour in a bag, then add chicken. Mix together.

In a saucepan, simmer the butter until bubbling and add the chicken. Cook until done. Regular breasts can be 5 min. each side, cutlets may only take 1 to 2 min each side.

While the chicken is cooking, in a separate bowl combine the capers, lemon juice and wine. If you like a lot of sauce, double these ingredients. Once the chicken is browned on both sides, add the sauce to the pan and cook down for another 3 min. or so. Goes well with rice and asparagus.
