Chicken Jambalaya 3 Recipe

  • 2 pounds oil
  • 3 pounds onions (chopped)
  • 10 thighs (remove skin)
  • 1 can mushrooms (stems and pieces) (large can)
  • 1 1/2 cups raw rice
  • 3 cups water
  • 1/2 cup chopped celery
  • 1/2 cup chopped parsley
Put oil in a heavy pot. Add Onions sprinkled with salt.

Cook uncovered until onions are melted(to about one cup) for 2 hours.

Add chicken, mushrooms, parsley, and celery.

Cook slowly until chicken has left the bones.

Remove bones. Add fresh parsley, rice and water.

Cook slowly until rice is done. Do not stir. fold over.

Serves 10
