Breakfast Burritos 19 Recipe

Ingredients
  • 24 flour tortilla shells (Sylvas work great) (small)
  • 1 pound mild sausage or bacon
  • 13 ounces thawed hash browns
  • 1 dozen eggs
  • 1/2 pound Velveeta, cubed
  • 2 tablespoons milk
Directions
Scramble the eggs in a large skillet and remove to a bowl. Melt Velveeta and milk in a medium sauce pan. Brown and crumble sausage or bacon in the same skillet. Add the hash browns and cook until brown. Add the eggs and cheese sauce to the skillet and stir until combined and heated through. Place 1-1/2 T mixture in each shell (easier to roll if you microwave for a few seconds) and roll like burritos. Serve immediately with salsa and sour cream. If not serving immediately, refrigerate or can be frozen. Reheat in microwave or place baking dish in 350° oven and bake till heated through. Garnish with sour cream and chopped green onion.
