If desired, (not necessary) partially cook the asparagus. Place the asparagus in a greased 9 inch baking dish. In a skillet over medium heat, evenly brown the chicken in oil. Season with salt and pepper. Arrange the chicken over the asparagus. In a mixing bowl, combine soup, mayo, lemon juice and curry powder. Pour over the chicken. Cover and bake at 375° for 40 minutes or until chicken juice runs clear. Sprinkle with cheese. Let stand for 5 minutes before serving. Serves 8 |
