Dissolve salt and sugar in cold water. Add remaining ingredients. Cover the pork with solution. Brine for 48 hours then remove pork. Yield: 6 lbs. pork.

-3 ounces kosher salt
-3 ounces sugar
- water as needed
-2 pounds onions
-1 pound celery
-2 bay leaves
-5 black peppercorns
-2 sticks cinnamon
-6 whole cloves
-1 tablespoon whole cumin seeds
