Directions
  • Preheat oven to 350ºF.
  • Place sausage in 9x13-inch pan; cover the sausage halfway with water. Cover the pan with aluminum foil and bake for 1 hour.
  • Place peppers and onions in another 9x13-inch pan; cover halfway with water. Cover the pan with aluminum foil and bake for 30 minutes.
  • Combine peppers and onions into sausage pan, reduce water to have sausages covered about 1/3 of the way.
  • Bake uncovered for 1 hour.
  • Strain water.
  • Serve on Italian bread.

-1 pound Premio sweet sausage, 2- to 3-inch slices
-1 large white onion, peeled and sliced
-2 pounds cubano peppers, cleaned and cut into quarters
