Rhubarb Crunch Recipe
  • Preheat oven to 350°F.
  • Mix flour, oatmeal, butter, cinnamon, and brown sugar until crumbly.
  • Press 1/2 of mixture into a pan. Cover with 4 cups of rhubarb.
  • Combine cornstarch, water, sugar, and vanilla. Cook over low to medium heat until thick and clear.
  • Pour over rhubarb and top with remaining crumbs. Bake for 1 hour.
