Golden carrots for color, crunch and all-around goodness, enhanced with the sweetness of raisins and the saltiness of sunflower seeds.

  • Peel carrots and grate coarsely, or shred in a food processor.  Dice pepper or cut into matchsticks and add to carrots. Stir in raisins and sunflower seeds and toss with vinaigrette. Sprinkle with parsley and serve.
