Drain vegetables and water chestnuts. Mix vegetables, water chestnuts, soup, onion and mayonnaise together. Pour into 9x13" casserole dish. Sprinkle cheese and crackers over top. Melt margarine and pour over crackers. Bake at 350° for approximately 25 minutes.
-2 ounces cans mixed vegetables or equivalent amount of frozen vegetables, cooked
-1 ounce can sliced water chestnuts
-1 ounce can cream of chicken soup
-1 ONION, chopped and sautéed (LARGE)
-1 cup mayonnaise
-1 cup grated cheddar cheese
