Night before, cut up bread in cubes and dry. (Enough bread to equal 12 C. crumbs.) The next day, brown ground pork sausage, onion and celery. In a mixing bowl, mix pork sausage mixture, dry bread crumbs, poultry seasoning, sage, pepper, thyme, chicken broth, melted butter, and eggs. Put all in a crock pot that has been sprayed with a nonstick cooking spray. Cook on high for 45 minutes and then for 6 hours on low. You may need to add more broth based on taste.
-12 cups dry bread crumbs
-1 pound ground pork sausage
-1 cup onion
-2 cups chopped celery
-1 teaspoon poultry seasoning
-1/2 teaspoon sage
-1/2 teaspoon pepper
-1 teaspoon Thyme
-4 cups low sodium canned chicken broth
-1 stick Melted Butter
-2 Eggs, beaten
