Picnic Ham
A cut of pork taken from the upper portion of the foreleg extending into and including a portion of the shoulder. It is not a true ham because it does not come from the back leg. The picnic ham is smoked, giving it a ham-like flavor. There is generally more waste for this cut because of the bone structure however, at times the bone is removed. It is a little tougher than a typical ham but as an inexpensive substitution for a true ham, it is a good cut to use in soups, casseroles and other baked dishes requiring ham.
