A French dish that is made with leftover beef which is referred to as boeuf Miroton in France or beef Miroton in English vocabulary. This dish is prepared with beef that has already been cooked and prepared for a previous meal, boiled potatoes, chopped onions, consomme, vinegar, fresh bread crumbs, and seasonings. The meat, which could be pot roast as an example, is cut into thin slices and surrounded by slices of boiled potatoes. Onions are sauteed in butter, consomme, mustard, tomato paste, vinegar, and seasonings which is poured over the meat prior to baking. The meat and other ingredients are then topped with fresh bread crumbs and butter at which point all ingredients are baked for only a short length of time, such as 10 to 12 minutes.
